That's a good question that I find difficult to answer.
Because I collect Morse keys I have a few more paddle keys than most to try out and to compare,
Although they all have differing 'feels' to them, none really leap out as perfect or best.
I managed in the end (after two days of thought!), to narrow my choice down to two keys. One is the White Rook MK-48 which is a straight key/double paddle key combo. I like this key because it is tiny and 'cute'.

The other paddle key, if forced to really choose just one, is a Long Island Mercury Twin Paddle key, made by KG2ED (these are later clones of the original design by N2DAN). So why the Long Island Mercury? Well, it does exactly what it should do!
The base ways about 5lbs or so, and with the cork ring around its edge the key never moves! In use it feels like it is bolted to the table, it's that solid. Also the keying feels superb, very crisp, very positive, the adjusters all have an extremely fine pitch threads so you can set the keys' tensions and gaps very accurately.
Ooh, and they look nice too, more chrome and shine than you could shake a stick at!
